
Easter in Florida will be simple and easy this year. All the good tableware is up North, but I always find a way to have a little fun with the tabletop and also research potential new recipes that will make our meal special. We will be having dinner for two…..unless you count my dog, Farrah, who insists upon sampling everything we eat.
The holiday menu main course will be prosciutto-wrapped scallops with sun dried tomatoes over arugula served with a side of asparagus risotto. Prior to the main dish, I will serve caviar on melt in your mouth crisps (as a lighter alternative to blinis), and Buffalo Mozzarella topped with tomato and fresh basil from one of the few balcony plants I haven’t managed to kill. The wines will be Veuve Clicquot champagne with the caviar and Sonoma-Cutrer chardonnay with dinner, both of which got ample mention in A Woman Named Rio because they are among this author’s favorites. Finally, dessert will be Tiramisu and espresso.
